INTERNATIONAL COOKIE DAY: Healthy Cookie Recipes to feed the soul

Considered to be widely adored, cookies are packed with a range of scrumptious ingredients according to your likes and preferences. They’re the perfect indulgent, whether it be, alone, or at a party. On good days, and even sad ones! These beloved treats are so versatile and devilishly delicious, they make the cookie monster relatable!

 

So, it’s only fair that they have a day of their own. And to celebrate International Cookie Day, here are some healthy, yet sinfully scrumptious recipes from True Elements!

  1. QUINOA COCONUT COOKIES

Description:

Make these nutty and crispy cookies for your tea time snack. They are delicious and healthy and easy to make!

 

Ingredients:

1½ cups True Elements Quinoa
1½ cups unsweetened desiccated (or shredded) coconut
½ cup coconut sugar, date sugar, or other unrefined sugar
½ cup peanut butter
½ cup coconut oil, melted
½ cup unsweetened vanilla almond milk
2 Tablespoons maple syrup
¼ cup cocoa powder
½ teaspoon vanilla
Pinch of sea salt
Coconut flakes for topping
 

Directions: (For qty, refer to the ingredients section)

  1. Mix quinoa and shredded coconut in a large mixing bowl.
  2. Heat a saucepan and add sugar, peanut butter, coconut oil, almond milk, maple syrup, cocoa powder, vanilla, and sea salt. Let everything melt completely and combine together. keep the leat low-medium.
  3. Pour the mixture over the quinoa and coconut. Keep stirring until everything is combined.
  4. Shape the cookies using the mixture as per your choice. Sprinkle coconut flakes on top.
  5. Freeze the cookies for about 30 minutes until they are set. The Quinoa coconut cookies are ready to eat!

 

  1. BANANA OATMEAL COOKIES

Description:

Prepared in just 20 mins, these soft, chewy and delicious banana oatmeal cookies are made with just 3 ingredients. These are a simple and light version of the ordinary oatmeal cookies with an addition of dark chocolate chips to add to the chocolaty taste. Flourless, eggless, low in calories and low in fats, these lip-smacking cookies are naturally gluten-free, vegan and healthier. Are you on a low-cholesterol diet? Give these cookies a shot.

Time: 20 mins.
Yields: 6 cookies

 

Ingredients:

2 large bananas (ripe)
1 cup Rolled Oats
1/3rd cup dark chocolate chips

 

Directions: (For qty, refer to the ingredients section)

  1. Preheat the oven to 350F Give the rolled oats a quick spin in a mixer, for about 30-60 seconds.
  2. If you want your cookies a crumbly and crispy texture, do not turn the oats into a fine flour.
  3. Pour all the ingredients in a large bowl and mix thoroughly.
  4. Spoon the paste of the cookies on a lined baking sheet and mould the cookies with the help of your fingers.
  5. Transfer the cookies to the oven and bake for about 20 mins, or until they turn golden brown.
  1. BERRY SHORTBREAD COOKIES

 

Description:

Cranberry shortbread cookies are buttery, soft, and they melt in your mouth! Hands down, one of the best Christmas cookies to make and share. Shortbread Cookies are soft and airy with a whole lot of butter.


Ingredients:

1/2 cup Softened Butter
1 cup Powdered Brown Sugar
1/2 cup Jaggery Powder
1/2 tsp Vanilla Essence
1/2 cup True Elements Dried Cranberries
1/4 tsp Lemon Juice
1 and a 1/2 cup Flour (all purpose)

 

Directions: (For qty, refer to the ingredients section)

  1. Mix together Butter and Sugar and Whist it until you get a creamy texture.
  2. Add vanilla essence, dried cranberries, lemon juice and mix it with a Spatula.
  3. Add the flour and mix it rigorously.
  4. Now, shape the dough into a log (long enough for the desired size of cookies).
  5. Wrap it in a cloth and refrigerate it for 3 hours to let the butter settle in.
  6. Once refrigerated, cut the log into thick slices and coat each cookie with Sugar
  7. Place these cookies in a baking tray lined with parchment paper.
  8. Bake it in a preheated oven (180 degrees for 20 mins preheat) for 12 minutes at 170 degrees.
  9. Once baked, take out the cookies, let them cool and relish it with tea or coffee.


 

Note: The cookie dough can be refrigerated for up to 3 days and can be baked fresh whenever needed.
