Dubai, UAE – November 2023: The Guild, Dubai’s answer to bustling brasseries of New York, continues to raise the bar with the grand unveiling of the pièce de resistance, Act III: The Aviary, a stunning cocktail bar with cigar lounge set to become the after-hours place for DJs and entertainment.
The Aviary is a night-time hideaway where cocktails flow, music pulses, and timeless design converge to create an unforgettable experience. Perched above The Salon, with the nostalgic backdrop of art-deco interiors adorned with six glittering chandeliers, the space unfolds under the visionary leadership of Melbourne-born trail blazer and EatX founder, Tom Arnel, in collaboration with London-based architect David Archer, celebrated for iconic creations such as the celebrity haunt Chiltern Firehouse and The Standard Hotel.
Open from 8PM till late, Tuesday to Saturday, the final act from The Guild transforms into a retreat where nocturnal guests can celebrate the essence of nightlife with The Guild’s resident DJs and tribal drummers alongside the occasional piano set – keeping the vibes alive late into the night.
The sumptuous space is adorned with rich velvet couches, gold accents and a striking cluster of chandeliers that glisten over a grand piano. Housing a whisky and cigar lounge, alongside a cocktail bar, visitors can expect the finest selection of first-class pours. Cocktail connoisseurs will be in safe hands at The Guild, with a beverage programme overseen by Vitor Lourenco, previously at Rosewood London. The Aviary’s boasts a significantly experienced team with some members having worked at the likes of Callooh Callay and Coupette in London’s Shoreditch – both of which previously ranked in the top ten for World’s 50 Best Bars.
The menu features time-honoured classics such as the iconic ‘Classico Negroni’, or the ‘Classico Martini…The Guild way’. Guests can also discover newly created sweet libations such as ‘Berry with Me’, blending the rich Bourbon Whiskey with Dominque Porter Rosé Wine; the ‘Bradshaw & The City’, a vodka-based pour that is complemented with pineapple soda; or ‘For The Boys’, an enticing alternative where Toki Whisky is paired with Plum Wine and peach liqueur.
Community is at the heart of The Aviary’s ethos, welcoming guests to retreat into a space that is devoid of ego – guests are invited to pull up a seat and sink into the buzzy atmosphere with a drink in hand. Into the evening, the resident DJs and drummers will raise the tempo of the space which morphs into the ultimate cocktail and bottle service experience.
